Wonderful Pumpkin Bread























It has been so rainy and gloomy around here that we almost ate all of this Pumpkin Bread before I could take a snap. I made 2 loafs on Monday and took one to a friend that just had knee replacement surgery last week.
Made Back Porch Soup today and Brent brought his Dad up for lunch before taking him for his eye appointment.
Now that Christmas is over I'm ready for Spring.

Pumpkin Bread
Ingredients:
3 1/2 cups flour
2 2/3 cups white sugar
2 3/4 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon ground cloves
1 teaspoon nutmeg
1 teaspoon salt
2/3 cup water
3 eggs, beaten
1/2 cup applesauce
1/2 cup butter, melted
15 ounces pumpkin


Directions:
1. Sift all the dry ingredients together in large bowl.
2. In a separate bowl combine eggs, water, applesauce, butter and pumpkin and mix well.
3. Make a well in the center of the dry ingredients and add the liquids, then mix until moistened.
4. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 60 minutes.

  1. Yummm....this sounds so good! And the photo is good too...Gavin was here on Monday and we made brownies so we still have a few of those left but I might have to give the pumpkin bread a try this weekend. We haven't been gloomy or rainy but its been really cold for the past 2 days. Monday it was 64 and by Tues. it was down to 19 most of the day with lots of wind...today was a bit better at 32 but still windy. Tomorrow is suppose to be back in the 20's. I'm bored already! I have a huge list of things to do but haven't found the drive to do any of them. Guess I was more worn out from the trip to mom's than I though.

  2. Thanks the bread is really good but I think my image is over sharpened.
    I should have backed the sharpen out of the web size action when I use it.
    This is a boring time of the year I about go nuts in Jan Feb and March.
    Just give yourself some time or get into a project. You could go shopping and buy yourself something new......LOL It will be time for spring planting before you know it.

    Make this bread. I did throw in a few nuts but you don't need them.
